STOVETOP ROASTED GARLIC/OIL
Roasted garlic is a staple in my refrigerator at all times. I usually make a big batch that will fit into a 16 ounce mason jar so I have it for all of my cooking needs. I also use the resulting oil to cook with and drizzle into soups or stews.
There’s nothing better than the mellow flavor of roasted garlic—perfect to smear on fresh baked bread or added to rice, mashed potatoes, soup, beans, etc.
I sometimes like to add rosemary sprigs to add an additional, subtle hint of flavor to dishes. Roasted garlic also lasts longer than fresh garlic because it’s cooked.
There are so many uses, I can’t think of one reason to not have a jar of roasted garlic in your fridge at all times.
PRESERVED LEMONS
Preserved lemons are one of my favorite go-to flavor pops that I always have on hand. You can buy a jar of preserved lemons that will be just fine, but they are so simple to make you may want to try the recipe below and skip buying pre-made.
Preserved lemons come in handy for all sorts of uses like vinaigrettes and marinades or throwing them in a pan of braised berbere spiced lamb shanks, or maybe a simple roasted cod dish.
There are so many things you can do with them, I recommend keeping a jar on hand at all times for bright, summery flavor.
