  1. In a large dutch oven or pot, heat the vegetable oil over medium heat. Add the ground beef a little salt and pepper and begin to brown. Using a wooden spoon, break up the meat as it begins to cook.

  1. Season the chicken thighs on both sides with salt, pepper, and Herbes de Provence. Add the oil to the sauté pan and place the chicken, skin side down into the pan to brown. Once browned on one side, flip the pieces of chicken and brown the other side. Remove chicken from the pan and set aside.

  1. Stir in the stock and the beans and allow the chili to simmer for 10-20 minutes to allow some of the liquid to evaporate.

  1. Adjust the seasoning with salt, pepper and more chili rub if necessary.
