Spring Pea and Yogurt Dip

Place a large saute pan over high heat (400°). Add 2 Tablespoons of vegetable oil to the pan and heat.

Add the shallots and leeks. Turn the heat down to medium and saute the vegetables until golden brown. Add 1 teaspoon of citrus herb blend and stir into the mix.

Add the peas to the pan. Season with salt, stir the mixture fully and then turn off the heat. Allow the mixture to cool completely.

Once cooled, place the pea mixture into a food processor along with the yogurt, garlic, olive oil and lemon juice. Turn on to blend. If the mixture is too thick you can add a touch of water to help move it along.

Adjust seasoning as you see fit.

Serve in a bowl with raw vegetables, crackers and chips on the side.
